GASTRONOMY OF GUAM
There are many recipes that are cooked on the island as part of the Hispanic heritage, although over the years these have been modified and adapted to the ingredients and ways of cooking on the island. A clear example is the: Eskabeche, Titiyas, Cheviche de chamorro, Latiyas.

• Latiya
Thickening a mixture of milk and eggs over low heat has been a culinary technique since Roman antiquity. This method has been an important part of European cuisine and each region has its own variations. Mixing these two simple ingredients with the addition of a simple flavor enhancer such as cinnamon or vanilla has resulted in the most popular dessert around the world: custard; a sweet and smooth treat known as latiya in Guam!
• Titiyas
Titiyas , derived from the Spanish word " tortilla ", is a flatbread made from cornmeal, wheat or other starchy plant. There are different types of titiyas siha (plural form of titiyas), including those made with pandan nuts, 'faddang'. In Guam, the common forms are flour (sweet flour), mai'es (corn) and faddang (Frederick's nut).This is an island totilla, they call it, "Titiyas". This dish can be substituted with bread or rice and can be eaten as a meal with meat, chicken or fish.
